Assalamualaikum.. Just to say thank you to all friends who support MBC. Here are some orders yang lama tersimpan dalam camera...



 Both orders are from Pn Maziah untuk jamuan hari raya . At the moment Pn. Maziah tengah berehat kerana kakinyer cedera.. Semoga cepat sembuh yer!!

Cinnamon Roll

Assalammualaikum,

Lama tak post resepi yg di try. Banyak lagi gambar2 dah resepi yg tersimpan dalam camera. Tapi cuba dulu la resepi ini..



Resepinyer:.. taken from Kak Rima

Ingredients


400 g bread flour(high-protein flour)
100 g cake flour
100 g caster sugar
5 g salt
20 g milk powder
1/4 tsp bread improver
1 egg (mix lightly)
11 g instant yeast
40 g shortening
250 ml air

Fillings

3 tbsp melted butter
1/4 cup light brown sugar
1/2 tsp cinnamon powder
1 cup raisins

Method

Put the flour, the sugar, milk powder, bread improver and yeast in a bowl, whisk to combine, add salt and whisk again. Pour water into bowl.
Use large spoon (or pastry scraper) to mix everything together, and knead briefly to bring all the ingredients together.
Take the dough out of the bowl and knead, you will see the dough will be elastic after about 2 minutes.
Add shortening and knead by using the heel of your hands to compress and push the dough away from you, then fold it back over itself (see the picture here). Give the dough a little turn and repeat. Put the weight of your body into the motion and get into a rhythm. Keep folding over and compressing the dough.
Knead for 10-15 minutes (up to your strength and up to the recipe) or until the dough is soft, pliable, smooth and slightly shiny, almost satiny.
Put the dough into a light buttered bowl. Let the dough rise in a warm place until
double in size about 1 hour.

Brush 8 ramekins well with butter.
Roll the dough into 20x30 cm square.
Spread fillings on the dough, then roll into the cylinder.
Cut into 8 pieces and place into the prepared ramekins.
Let the dough rise until almost double in size.
Preheat the oven to 180°C.
When the dough is ready, brush with egg wash, then put the dough into the oven.
Bake for 15 minutes, or until the dough is golden.
Let the bread cool on the wire rack.
I skipped the egg wash and used melted butter to brush my bread after its baked instead.

Epok epok @ Spera


Dok pikir aper la nak buat dgn lebihan inti kelapa pulut panggang ni. Last week dah buat pulut panggang, minggu ni nak try buat epok epok la pulak.Ada orang panggil spera. Inti pulut pangggang ni mak mummy yg buat. Memang cukup rasanyer kalau org tua yg buat...

Untuk kulit karipap ni mummy guna 1/2 kg tepong gandum, 2 sudu besar minyak (di panaskan, takyah la sampai menggelegak pulak. Cukup sekadar panas) , sedikit garam dan air secukupnyer. Mummy tambah sikit margerine untuk bagi sikit rasa lemak. Uli sampai jadi dough. Dan buat seperti biasa, apa lagi gentel la dia jadik karipap.



Makan panas panas dgn teh O panas memang sedap....

Rainbow Cake

Seperti yang dijanjikan semalam Mummy nak share resepi Rainbow Cake yg Mummy buat utk my mother's birthday and father's day. Resepi cilok from here

2 sticks (226 g) butter, room temp

2 1/3 c (466 g) sugar - Mummy guna 2 cup jer..
5 egg whites, room temp
2 teaspoons vanilla
3 c (375 g) flour
4 tsp baking powder
½ tsp salt
1 1/2 c (355 g) milk, warmed for 30 sec in microwave to bring to room temp
Red, orange, yellow, green, blue and purple GEL food coloring. Liquid will not be vibrant enough!

Preheat the oven to 350F degrees. Oil and line how ever many 9” cake pans you have (I have three and I just reused them).
Sift together the flour, baking powder and salt. Set aside.
Cream the sugar and butter, then add the egg whites (I cracked them all into one bowl) and add them a little at a time. Add the vanilla and mix until fully incorporated. Then, alternating between wet and dry, add the milk and flour mixture in two parts.

Divide the batter amongst 6 bowls (I did it by weight. Weigh your mixing bowl before you begin adding ingredients and then subtract the weight of the bowl from the final measurement after the batter is completed. Divide that number by six and add that weight of batter to each bowl), and then whisk a fair amount of the appropriate food color into each bowl. Keep in mind that the color of the unbaked batter will be the color of the baked batter. Pour into the pans and bake for 15 minutes each.

When you remove them from the oven, let them rest on the cooling rack, in the pan, for ten minutes. Then flip, cover, and stash them in the fridge to cool quickly.
 
Untuk frosting nyer.. Mummy prefer fresh cream jer.. senang nak buat pun.

Boleh juga guna frosting Swiss Meringue Buttercream.

Cuaca sekarang ni memang tak menentu, pagi panas lit lit.. tiba tiba "pokok hujan" muncul... orang utara kata bila awan berkepui hitam kat langit tu..itu la pokok hujan. Sesuai la dgn tema "Kek Pelangi" untuk birthday Ibunda tercinta Puan Norli Bt. Haji Salleh dan utk father's day juga untuk Ayahanda tercinta En. Abu Bakar.

Ala Italiano.. Tortila


Juadah sarapan pagi yang paling senang nak disediakan. Anda hanyer perlukan beberapa keping Tortila ( Mummy beli kat Giant) . Tortila ni ada macam macam perasa. Plain la , garlic la..etc..etc.. Isi ayam tu di grill atau pun mana yang ada terlebih ayam goreng semalam ker, buleh la di potong kiub dan simpan dalam fridge. Chopped onion, diced tomato (buang kan isi dalam takut berair), chopped mushroom, pasta souce (mummy guna Pasta Souce Ragu), mayonaise dan Thousand Island. Dan yang penting cheq Dah dan che Ella (cheese cheddar and mozzarella)

Spreadkan pasta souce diatas tortila tadi. Letakkan segala bahan bahan yang telah di chopped. Letak kan mayonaise and thousand island and last skali baru lah di taburkan che Ella dan che Dah kita tadi. Then bakar selama 10-15 min dalam oven 160 C.

Walla... siap untuk dijamu...

Happy Besday Abg Zameer...sorry mummy lupa nak post

Pada tanggal 17hb May 2011, genap umur hero ku yang ke 6. Actually tak prepare pun nak buat cake, tapi kesian kat dia. After lunch treat at Mc D Puncak Alam.. kesian plak tak dak upacara potong cake. Maka Mummy keluarkan lah segala telur, susu ..  he was requested Red Velvet.. mcm cake Bapak..cuma this time takdak strawberry. Just plain Red Velvet.

Pukul 630pm cake pun siap.. dah la hari hujan, lampu pun agak malap (bila la nak panggil org repair ntah)..so gambar pun agak gelap..he he..dah la penduduk2 nyer pun agak gelap.. layan la gambar..

Lilin no. 6 tu dah beli sejak tahun lepas. Mummy lupa umur Zameer tahun lepas.. anak ramai da....

Rendang ker Kari???


Normally during weekend , mummy try not to cook normal resepi from weekdays. Selalunyer asam pedas, masak lemak , masak kicap.. jemu pulak rasernyer..

Few days ago , buka buka AFC terus muka Chef Wan tengah masak dalam rancangan Best + Wan. Memang dok teringin nak masak green curry ni.. nak bagi tau jugak ..mummy ni sebenaqnya tak pernah makan green curry ni..so tak tau la cam na raser nyer yg sebenar.. Bila tengok Chef Wan masak, eh..bahan bahan nyer bukan susah nak dapat pun..kat pasar malam . Tapi seperti biasa la.. mummy akan ikut resepi sendiri sementara memory mummy masih fresh...

Yang syoknyer daging yang mummy beli kali ni memang lembut, minta batang pinang dah habis. Sebenarnya mummy bukan gheti sangat jenis 2 daging ni.. Tapi Curry mummy kali ni dah jadik rendang sebab tak dak kuah... tu yang Mr. Hubby complain sikit.. tak pa la lain kali cuba lagi...

Ok.. banyak sgt pulak membebel.. cuba la yer..

Ingredients : Resepi Chef Wan


1/2 cup Vegetable Oil
1 kg Beef Topside, diced
2 cups Coconut Cream (Santan Pekat)
2 bunches Pea Eggplant (Terung Pipit) or any Aubergine or Eggplant (Terung) - mummy tak letak any vege..
3 sprigs Thai Basil Leaves (Daun Selasih) - mummy tak letak sebab tak jumpa..
Salt, Pepper and
Palm Sugar (Gula Melaka) to taste
Lime Juice to taste
Fish Sauce to taste (optional)

Paste Ingredients: - to be Finely Pounded

100 g Green Chilies - mummy guna cili besar dalam 6 biji campur cili padi ikut tahap kepedasan masing2
1 large Onion, peeled
10 Shallots (Red Onion), peeled
4 Coriander Roots
4 Coriander Leaves (Cilantro, Chinese Parsley or Ketumbar)
2 cm / 1 inch Ginger, peeled
2 Lemongrass (Serai), finely sliced
2 Kaffir Lime Leaves (Makrut, Daun Limau Purut)
1 tsp roasted Shrimp Paste (Belacan)
2 Tbsp / 1 fl oz Coriander Powder (Serbuk Ketumbar)
2 Tbsp / 1 fl oz Fennel Powder
1 Tbsp / 1/2 fl oz White Peppercorns or Black Peppercorn - mummy tak letak
1 cup water

Method

Heat Oil and fry Paste until fragrant. Add in Beef and stir-fry, and then cover the wok with a lid for 5 minutes at medium heat.

Add Coconut Cream, Pea Eggplant, and Thai Basil Leaves and simmer for 25 minutes.

Add in Kaffir Lime Leaves, Palm Sugar, Lime Juice and salt and pepper to taste. Continue to simmer for 3 minutes, and then serve.

Selamat menjamu selera..

Belah petang pulak mummy try buat roti plak.. ready made ingredient yang dalam kotak tu


Jadik nyer macam ni... sedap bila dimakan panas panas.. Semua bahan dah diadun cuma tambah yeast (pun dah ada dalam kotak) nagn air jer




Sapukan dengan butter and jem.. ni semua sebab kawan ku Aziana yang telah membeli Bread machine..tu yang nak buat gak roti sebab tpg segera tu dah beli lama..





Bread pudding for Iftar..

Pejam celik pejam celik dah masok bulan Rejab... insyaallah  panjang umur, berpuasa la kita di bulan Ramadhan nanti. Hampa semua dah ganti posa ka? Mummy alhamdulillah dah selamat menganti.. ni ambik berkat bulan Rejab puasa sunat la pulak. Pasni sibok plak carik resepi biskut2. Dah ada few resepi yang terlintas di fikiran mummy nih.. Insyaalah.. hajat hati tahun nak buat biskut raya ngan anak anak. Tahun lepas tak kesempatan.

Gambar kat bawah ni, juadah buka puasa mummy semalam. Bread pudding "campak campak". Kenapa campak campak.. bukan campak bahan2 nyer tapi resepi ikut sedap hati. Tapi nanti mummy ikut jugak resepi yang ada cuma sukatan bahan2 ikut rakyat jelata di rumah la...




Resepinyer

10 keping roti
4 biji telor
250 ml susu segar
1 tsp vanilla essence
secubit garam
1/4 cup butter (cairkan)
1 tsp serbuk cinnamon
3 tbsp gula halus
Kismis / Chocolate chip

Caranyer:
- Panaskan oven 160 C .
- Potong kecil2 roti tadi. Gaulkan dengan melted butter. Put aside.
- Dalam mangkuk yang lain masokkan telur kedalam susu segar bersama2 gula. Kacau hingga gula hancur.
- Masokkan serbok cinnamon, garam dan vanilla.
- Tuang kan kedalan roti yang telah digaul dengan butter tadi.
- Tekan2 kan supaya adunan susu tadi meresap masok ke dalam kepingan roti tadi. Rihatkan selama 2-3 minit.
- Bakar selama 15-20 minit.

Sedap jugak kalau dimakan dgn custard..tapi kat rumah ni selalunyer memang tak dan nak buat pun..

Something to share...

Got this lovely message from my beloved husband...

This is a powerful message in our modern society. We seemed to have lost our bearings & our sense of direction.

One, young, academically excellent person went to apply for a managerial position in a big company.
He passed the first interview. The director who did the last interview, made the last decision.
The director discovered from the CV that the youth's academic achievements were excellent all the way, from the secondary school until the postgraduate research. He never had a year when he did not score.

The director asked, "Did you obtain any scholarships in school?" The youth answered "none".

The director asked, " Was it your father who paid for your school fees?" The youth answered, "My father passed away when I was one year old. It was my mother who paid for my school fees."

The director asked, " Where did your mother work?" The youth answered, "My mother worked as a clothes cleaner. The director requested the youth to show his hands. The youth showed a pair of hands that were smooth and perfect.

The director asked, " Have you ever helped your mother wash the clothes before?" The youth answered, "Never, my mother always wanted me to study and read more books. Furthermore, my mother can wash clothes faster than me."

The director said, "I have a request. When you go back today, go and clean your mother's hands and then see me tomorrow morning."

The youth felt that his chance of landing the job was high. When he went back, he happily requested his mother to let him clean her hands. His mother felt strange, but with mixed feelings, she showed her hands to her son.

The youth cleaned his mother's hands slowly. His tears fell as he did that. It was the first time he noticed that his mother's hands were so wrinkled and that there were so many bruises in her hands. Some bruises were so painful that his mother shivered when they were cleaned with water.

This was the first time the youth realized that it was this pair of hands that washed the clothes every day to enable him to pay the school fee. The bruises in the mother's hands were the price that the mother had to pay for his graduation, academic excellence and his future.

After finishing the cleaning of his mother hands, the youth quietly washed all the remaining clothes for his mother.

That night, mother and son talked for a very long time.
Next morning, the youth went to the director's office.

The Director noticed the tears in the youth's eyes and asked, " Can you tell me what you did and learned yesterday in your house?"

The youth answered, " I cleaned my mother's hands, and also finished cleaning all the remaining clothes.'

The Director asked, " Please tell me your feelings."

The youth said, Number 1, I know now the meaning of appreciation. Without my mother, there would not be the successful me today. Number 2, by working together and helping my mother, only now I realize how difficult and tough it is to get something done. Number 3, I have come to appreciate the importance and value of family relationship.

The director said, " This is what I am looking for in my new manager.

I want to recruit a person who can appreciate the help of others, a person who knows the sufferings of others to get things done, and a person who would not put money as his only goal in life. Son,you are hired."

Later on, this young person worked very hard, and received the respect of his subordinates. Every employee worked diligently and as a team. The company's performance improved tremendously.
A child, who has been over protected and habitually given whatever he or she wanted, would develop theentitlement mentality and would always put himself first. He would be ignorant of his parent's efforts. When he starts work, he assumes that every person must listen to him, and when he becomes a manager, he would never know the sufferings of his employees and would always blame others. This kind of person, may be good academically and may be successful for a while, but eventually would not feel a sense of achievement. He will grumble and be full of hatred and fight for more.

If we are this kind of protective parents, are we really showing love or are we destroying the kid instead?*
You can let your kid live in a big house, eat good meals, learn piano, watch a big screen TV. But when you are cutting grass, please let him experience it. After a meal, let him wash his plates and bowls together with his brothers and sisters. It is not because you do not have money to hire a maid, but it is because you want to love him in the right way. You want him to understand, no matter how rich his parents are, one day their hair will grow gray, same as the mother of that young man . The most important thing is your kid learns how to appreciate the effort and experience the difficulty and learns the ability to work with others to get things done.

You would have forwarded many mails to many and many of them would have back mailed you too...but try and forward this story to as many as possible...this may change somebody's fate...

Meh kita tocang rambut...

Sausage Cheese Rolls



Bila sausage dah habis..jadila Pain au Lait..

Resepi from: Dailydelicous

Ingredients:

300 gm bread flour
1 sachet Instant dried yeast
10g sugar ( i put more sebab nak bagi manis sket)
6 gm of salt ( i put secubit..)
30g unsalted butter (soft)
220-230gm one egg plus whole milk (campurkan)
12 pieces sausage
6 slices cheese ( kalau suka cheese boleh tambah )
**One egg plus 2 tsp of water for glazing
    Sedikit caster sugar untuk ditabur

Cara caranya:

  • Put flour, sugar and yeast in a bowl. whisk to combine, add salt and whisk again. Pour the egg and milk mixture into the bowl.
  • Mix togather using large spoon or pastry scapper, and knead briefly to bring all the ingredients together. Take the dough out of the bowl and knead again. you will see the dough will be elastic after about 2 minutes.
  • Add the butter and knead by using the heel of your hands to compress and push the dough away from you, then fold it back over itself. Give the dough a little turn and repeat. Put the weight of your body into the motion and get into a rhythm. Keep folding over and compressing the dough. Knead for 10-15 minutes or until the dough is soft, pliable, smooth and slightly shiny, almost satiny.  
    Or you can also try stretching part of the dough, if it can stretch into a thin sheet without breaking, you've kneaded enough.
  • Put the dough into a light buttered bowl. Let the dough rise in a warm place until double in size (can be 1 hour or 1 hour and a half check often depend on the temperature).
    Take the dough out of the bowl, deflate by touch it lightly.
  • Cut the dough into 12 pieces, roll into a ball and let them rest for 10 minutes.
  • Using a rolling pin to roll the dough into an oval shape, place the sausage in the middle, cut both side of the dough into strips, and place half of the cheese slice over the sausage. Fold the strips alternating the left and right over the sausage.
  • Place the dough on the oven sheet, lined with non stick baking paper (the cheese will melt while baking and some will leak). Preheat the oven to 200°C. Let the dough rise until almost double in size, brush with egg wash. Bake for 8 minutes then reduce the temperature to 180°C and bake for 5 minutes more or until the rolls are golden brown.

Apam Polka Dot..

Apam polka dot... cantik..tapi sedap ker?? Memang sedap.. yang bezanya dari traditional apam.. dia ada inti... as for me blueberry jam was my option. ..Meh layan gambar ..

Bahan-bahan

  •  3 biji telur-dari peti sejuk(gred A)- 
  • 275 gm tepung gandum 
  • 220 gm gula halus
  • 150 ml susu segar@susu cair
  • 3 sudu teh baking powder 
  • sedikit esen vanilla
  • 1 sudu kecil ovalette
  • filling ikut citarasa
  • pewarna  
Cara-cara:
Pukul gula dan telur hingga kembang.
  1. Masukkan tepung (yang telah diayak bersama dengan baking powder terlebih dahulu) sedikit demi sedikit sambil dipukul.
  2. Masukkan susu dan akhir sekali ovallette. Gunakan mixer kelajuan maksima dan dipukul sehingga semua bahan sebati dan kembang.
  3. Bahagikan adunan kepada dua bahagian. Setiap bahagian diwarnakan berlainan.
  4. Ambil sedikit dari setiap warna adunan dan diisikan ke dalam piping bag kecil ...(gunakan plastik kecil pun ok jer...asalkan berbucu!). Guntingkan bucu sedikit sahaja...agak2 lubang sekecil lidi aje. - Inilah yang akan digunakan untuk dot dot tu nanti...
  5. Filling yang digunakan  perlu diisi dalam piping bag kecil (atau pun plastik seperti adunan untuk dot dot tadi)
  6. Sediakan mangkuk kertas ke dalam dalam bekas muffin yang kecil
  7. Sudukan adunan (satu warna dulu - contohnya 'kuning') sehingga separuh daripada mangkuk kertas.
  8. Picitkan filling kesukaan kita
  9. Sudukan lagi adunan warna yang sama (kuning) hingga lebih sikit je dari 3/4 mangkuk kertas.
  10. Ambil adunan warna berlainan (biru) yang telah diisi dalam piping bag dan di picit bulat kecil di atas adunan kuning tadi. Ulangi langkah 8-11 dengan menggunakan adunan warna berlawanan pula.
  11. Panaskan pengukus. Cara terbaik bagi memastikan apam yang dimasak nanti cantik permukaannya, balut penutup pengukus kita dengan kain bagi mengelakkan air wap kukusan jatuh ke atas permukaan apam semasa mengukus nanti.
  12. Kukuslah apam dalam 7-10 minit atau sehingga masak.
